Cranberry Relish

Another thing I made for the first time and served at one of our Thankfulness breakfasts was a cranberry relish.  I found the recipe online at Simply Recipes but modified it slightly because I do not have a food grinder.  This is also very simple to make, and nice and tart to serve alongside of savory dishes or to eat with turkey or on a turkey sandwich!  I served it alongside baked oatmeal and fresh oranges.

This is very fresh and fragrant, and would also make a lovely gift the week of Christmas to serve at special Christmas meals.  Just make sure to include instructions to refrigerate and use within a week.

Peel and wedge 2 tart apples.  Cut an orange in fourths and leave peel on - make sure there are no seeds. Pulse apples and orange in a food processor until they are in small chunks.  Add in one bag of fresh cranberries.  Pulse again until in relish form, but be careful not to overprocess.  Mix in 1 1/2 cups of sugar and let dissolve for about 45 minutes.  Store in refrigerator.
