Marinated Strawberries (You Are Going To Want To Make These!)

I love cooking with fresh ingredients, and a few years ago my mom introduced me to this amazing and simple recipe for Marinated Strawberries.  It is from one of the Weight Watchers Five Ingredient Fifteen Minute cookbooks you can buy in magazine form, and is so healthy and deliciously tasty.

The girls and I made a batch at the youth group girls sleepover the other night and it was gone in a flash!  You can eat these plain for a healthy snack or dessert, or serve them over spinach for a salad that doesn't even need dressing because of the fresh juice.


Marinated Strawberries

2 TBSP fresh lime juice
2 TBSP honey
1/2 tsp olive oil
1/2 tsp cracked black pepper
1 quart fresh strawberries cut into thick slices
grated lime rind

Combine first 4 ingredients; stir with a wire whisk.  Add strawberry slices, and toss.  Cover and chill if desired.  Sprinkle with lime rind.


You can double the amounts for the marinade if you want the strawberries juicier, and I add the lime rind right away and whisk it in with the other ingredients.  The only thing a few of the girls didn't care for was the cracked pepper.  It adds a little spice and intensity, but you could leave it out if you want.  And if you added some walnuts, pecans, or almonds to the strawberries and spinach leaves it would make the salad even tastier and add crunch!
